BBQ#201 TC’s Ponderosa Bar-BQ – Dickens, Texas.

I stopped into TC’s Ponderosa Bar-BQ with high hopes, drawn in by the classic roadside smokehouse vibe — tin roof, wood stacks out back, but lacked that unmistakable scent of barbecue that usually promises something special. Unfortunately, the food didn’t quite live up to the interest level from me.

Let’s start with the brisket. The cut itself was good — clearly a quality piece of meat — but the execution missed the mark. The bark was faint, the smoke ring almost invisible, and the texture leaned dry rather than juicy. Flavor-wise, it lacked that deep, smoky richness and tender melt that defines great brisket. You could taste the potential, but it just didn’t come together. 1 out of 5.

The sausage was a small step up. It had a decent snap when you bit into it and a touch of peppery flavor, but the seasoning was uneven and the texture leaned a little rubbery. It felt more like something prepped offsite rather than smoked fresh that day. 2 out of 5.

Sides were serviceable — basic beans but they were out of Mac N Cheese, nothing to complain about but nothing to rave over either. The staff was friendly, and the place had that old-school charm that makes you want to linger a bit, but barbecue lives or dies by what’s on the plate, and in this case, it just didn’t quite deliver.

In short, TC’s Ponderosa Bar-BQ has the setting and the heart — but the pit needs more patience, more smoke, and more care to bring those meats up to Texas standard
