This was my first time going to Haywire, a trendy restaurant and bar in the swanky Legacy West part of Dallas. I had heard good things so this was a great chance to go and see for myself.
One of the nice touches for this tasting was your name written on a slate mat.
So each course was paired with a whiskey from Texas and from the USA and they were blinded, just called No 1 and No2 and we used a glass to collect the votes.
The Amuse Bouche – Arancini Ball – Texas Size
Firs Course was Cold Smoked Gulp Snapper, Boozy Currants, Fennel, Burnt Orange and Pickled Red Onions.
Second Course was Sweet Tea Brined Pork Belly which truly melted in your mouth, served with pickled gold beets, brussels and a Frisee. Marvellous.
Main Course was Slow Cooked Beef Tenderloin, baby carrots, Yukon Gold moose, bacon Lardons, Cherry Demi glaze and crispy shallots.
Dessert was a Tartalette.
This was a fabulous night and it was 2-2 at the end so we had two more shots to settle it…… America won I am afraid, sorry Texas.
