BBQ#189 Zavala’s Barbecue – Dallas – Texas – USA

I had heard all the hype around this BBQ joint so decided to drive the 40mins south and see what it was all about. Arrived as usual about 1 hour before it opened and we were about 5th in the line, they had free beer so we grabbed one and sat down.

Well at 11am people start to shuffle around and cars start arriving in the very muddy car park, there is a buzz of excitement ! I managed to take this video about 10.55am before the crowds arrived.

So we place our order, the same at every BBQ place we visit. 1lb Extra Moist Brisket, 1/2 lb Ribs, all the sausage types and here we got Beef Cheek as an extra from here. Add on the BBQ beans and potato salad.

After getting our tray of food we walk outside, find a table and begin tasting this BBQ.

So what did we think ?

Brisket was moist, it had a fabulous rub, pepper, crunch and a lovely mouth feel. The fat was super tasty, the beef was very high quality and the overall taste was certainly Top 10 in my opinion. The sausage was spicy for sure, the Jalapeno is chunky and hot, the sausage quality is chunky as well. The ribs had a sweet rub, a little pepper and whatever the rub is makes them a great flavoured rub. The Beef Cheek I almost wanted to suck and swallow, it was so well cooked and moist and tasty – gosh it was yummy.

In summary all of the items were fantastic on this day, certainly a worthy Top 10 but not quite a top 5 for me, just missed some deeper smoke flavour in the brisket and the ribs needed to be cooked a little longer for me personally, otherwise go and try this BBQ, just amazing.
